As we traversed the lanes of Panipat, we arrived at Halwai Hatta, which is also known as Pansari Hatta. Upon entering it, on the right side lies the alley of Nihal Devi Dai, which leads ahead to a Kalawati School on one side and ends at the rear of Aditya Pansari's house on the other. Right in front is Chiman Kachori wala's shop—I have been seeing them for four generations. Moving further, there used to be Pandit ji's halwai shop, and right across from it, on the right side, there are numerous sweet shops. Here, imarti made from urad and moong dal, peda, and rabri (malai) have been very famous. There were also several shops for kachori-poori. In Panipat's traditional cuisine, which is also called "pakka khana," it includes bedmi poori, potato curry, pumpkin vegetable, a sweet-sour chutney made from mango kernels, amchur (dried mango powder), and lotus stem called "lonji," along with sooji halwa. Nowadays, they've added chhole to it as well. On the left side, there's an alley that leads towards the fort, where there are shops for sattu ki chaat, aloo tikki, and samosa. In the chowk, there's another separate alley on the left that leads towards the fort. The chowk also has a special kulfi shop that was established after the Partition. In the same chowk is Atmaram Pansari's shop, now run by his grandsons. The surrounding area has many small pansari shops, and right here is Ratna Lal Jain's large utensils shop. At the end of this chowk is Jai Bhagwan Jain's attar and desi medicine shop, now operated by his sons and grandsons. Attar means those who extract essences from herbs and plants.

Before the Partition, this place was famous for four things: mullahs, mosques, flies, and malai. In the homes of our city, various dishes were prepared in the kitchen, especially during festivals. After Holi, after playing phag (Holi songs), a fair of food and drinks would be set up in this very hatta in the evening. Whenever I returned from Arya Samaj with my mother, I would request her to sing aarti, and she would oblige. In this very chowk, before the Partition, there used to be shastrarth (scriptural debates) between Arya Samajis, Jains, and Muslims, and everyone would enjoy them. In my city, there was never any communal tension, let alone fights. Even when, after the Partition, Muslims started leaving for Pakistan, they left their valuable belongings in the homes of Hindu Aggarwals and Jains, saying they would collect them once things calmed down. And the people here treated it as a trust and safeguarded it, waiting for the owners to return. After the Partition, bhajanik (devotional singers) would propagate in this very hatta. What times those were, and this Halwai Hatta is an eyewitness to it all. From this chowk, moving ahead, one path leads to Gud Mandi, and the other to the main bazaar.

(हलवाई हट्टा)

पानीपत की गलियों को पार करते हुए हम हलवाई हट्टा पहुँचे, जिसे पंसारी हट्टा भी कहा जाता है। इसमें घुसते ही दाईं ओर निहाल देवी दाई की गली है, जो आगे जाकर एक कलावती स्कूल की ओर जाती है और दूसरी तरफ आदित्य पंसारी के घर की पिछली दीवार पर खत्म होती है। सामने ही चिमन कचौड़ी वाले की दुकान है—मैं इन्हें चार पीढ़ियों से देख रहा हूँ। आगे चलकर पंडित दीप चंद जी की हलवाई की दुकान हुआ करती थी और उसके ठीक अनिल, बंसल स्वीट और सामने दाईं तरफ अनेक मिठाइयों की दुकानें हैं। यहाँ उड़द और मूंग की दाल की इमरती, पेड़ा और रबड़ी (मलाई) बहुत मशहूर रही हैं। कचौड़ी-पूरी की भी कई दुकानें थीं। पानीपत के पारंपरिक खाने में, जिसे पक्का खाना भी कहते हैं, बेड़मी पूरी, आलू की सब्जी, पेठे की सब्जी, केरी के दानों, आमचूर और कमल ककड़ी से बनी खट्टी-मीठी चटनी जिसे लोंजी कहते हैं, और साथ में सूजी का हलवा होता है। अब छोले भी जोड़ दिए गए हैं। बाईं ओर की गली जो किले की तरफ निकलती है, वहाँ सत्तू की चाट, आलू टिक्की और समोसे की दुकानें हैं। चौक में भी एक अलग गली बाईं ओर से किले की ओर निकलती है। चौक में कुल्फी की एक खास दुकान है जो विभाजन के बाद बनी। चौक में ही आत्माराम पंसारी की दुकान है जो अब उनके पोते चला रहे हैं। इसके आसपास के इलाके में पंसारी की अनेक छोटी-छोटी दुकानें हैं और यहीं रत्न लाल जैन की बर्तनों की बड़ी दुकान है। इस चौक के अंत में जय भगवान जैन अत्तार की देसी दवाइयों की दुकान है जो अब उनके बेटे और पोते चला रहे हैं। अत्तर यानी वनस्पतियों का अर्क निकालने वाले।

विभाजन से पहले यह जगह चार चीजों के लिए मशहूर थी: मुल्ला, मस्जिद, मक्खी, मलाई। हमारे शहर के घरों में भी रसोई में विभिन्न खाने बनाए जाते थे, खास तौर पर त्योहारों में। होली के बाद फाग खेलकर इसी हट्टे में शाम को खाने-पीने का मेला लगता था। मैं जब भी अपनी माँ के साथ आर्य समाज से लौटता तो मैं उनसे आरती की फरमाइश करता और वह पूरी करतीं। इसी चौक में विभाजन से पहले आर्य समाजी, जैनों और मुसलमानों के बीच शास्त्रार्थ होते थे और सभी लोग इसका आनंद लेते थे। मेरे शहर में कभी कोई सांप्रदायिक तनाव नहीं हुआ, झगड़ा तो दूर की बात है। यहाँ तक कि जब विभाजन के बाद मुसलमान पाकिस्तान जाने लगे तो अपना बेशकीमती सामान हिंदू अग्रवालों और जैनों के घरों में दे गए कि मामला शांत होने पर ले लेंगे। और यहाँ के लोगों ने भी इसे अमानत समझकर संभाल कर रखा कि जब मालिक आएंगे तो ले लेंगे। विभाजन के बाद इसी हट्टे में भजनिक प्रचार करते थे। क्या समय था और यह हलवाई हट्टा उसका चश्मदीद गवाह है। इस चौक से आगे चलकर एक ओर गुड़ मंडी है और दूसरा रास्ता बड़े बाजार की ओर जाता है।
